Margarita Pizza

For the pizza dough:

  • 250g flour
  • 3g salt
  • 3g sugar
  • 3g olive oil
  • 50ml beer
  • 100ml warm water
  • 6g fresh yeast

For the topping:

  • Tomato sauce
  • Dried basil
  • Fresh tomato, thinly sliced
  • Mozzarella
  • Fresh Basil

Instructions

Add fresh yeast to warm water.

Mix the dry ingredients – flour, salt and sugar and place on a clean table in the form of a volcano. Add the beer, olive oil and water and yeast. Sprinkle some extra flour to get it off the table if necessary.

Mix and knead carefully with your hands until it is a homogeneous dough. Do not knead too much as the dough will be too elastic.

Place in a bowl and leave to prove for 1 hour at room temperature, covered with a clean cloth.

Preheat the oven to 220 degrees Celsius.

Once it has proved, knock it back and then stretch with your hands until it is as thin as possible and shaped as you wish. You can stretch it directly into your oven tray, but make sure you flour the bottom to avoid it sticking.

Arrange a little tomato sauce on the dough, sprinkle a little dry basil, arrange the thin slices of fresh tomato, finish with the mozzarella sliced thinly, or use grated mozzarella and sprinkle evenly all over the pizza.

Bake for 5 minutes, remove and sprinkle with fresh basil.

Add more toppings according to taste and what you have in the fridge. Great options include black olives, ham, salami, peppers, bacon etc. – the only limit is your imagination! Why not arrange in the shape of a face to make you all smile?

La Reserva’s signature chocolate fondant

Ingredients

  • 6 eggs
  • 150g icing sugar
  • 200g unsalted butter
  • 110g self-raising flour
  • 220g cooking chocolate
  • 5g salt

Instructions

Melt the butter with the chocolate

Mix the eggs, sugar and salt, add the melted butter and chocolate mix and finally the sieved flour.

Mix well and place in small ramekins previously greased with butter.

Bake at 220°C for 5 minutes.

Please note that cooking time will depend on the size of the mould. You want to achieve a crisp outside with a soft, oozing centre.

Remove carefully from the ramekins, decorate with icing sugar on top and serve with vanilla ice cream.
